Ally’s Manuka Honey Energy Bars

Energy Bar Recipe

They have a very simple list of ingredients - Rolled oats, rice bubbles, coconut oil or butter, Manuka Doctor Manuka honey and salt. They don’t require any baking. They are made in one bowl and are so simple to throw together.

Just slowly melt the honey and coconut oil (or butter) together, stir through the oats, rice bubbles and salt. Press really firmly with the back of a spoon into a tin lined with baking paper.This helps the bars hold together better when they have set.

Refrigerate until solid - I find 45-60 minutes is sufficient. Slice into pieces and enjoy. I like to store in the fridge.

 

Base Ingredients:

  • 1 cup rolled oats
  • 1 ½  cups rice bubbles
  • ⅔ cup Manuka Doctor Manuka honey
  • ¼  cup of Coconut oil or 125g butter
  • 1/8  teaspoon salt

 

Can I add extras?

Yes of course! I also sometimes add 2 teaspoons of chia seeds for extra nutritional value.  You could add desiccated coconut, dried cranberries or chopped apricots or peanut better. I would only add about ⅓ cup of extras as otherwise they won't hold together quite so well.

 

Equipment you will need:

A pot, bowl, mixing spoon, baking paper & a square biscuit or cake tin approx. 20 x 25cm tin.
